October is here! After the spring/summer of fresh salads, produce, and grilling, I love breaking out the crock-pot for some hearty dinners. Plus – there’s absolutely nothing better than setting the crock-pot in the morning and having a warm meal ready at the end of the day…
These are some of my favorite crock-pot recipes from around the web. My absolute favorite is the Mississippi Roast, you must try it!

Chili Mac Crock-pots were invented for chili – this recipe adds pasta which helps bulk it up!
Mississippi Roast So easy! The best way to have a pot roast. It literally falls apart.
Barbacoa (Pulled Mexican Beef) Great for tacos. Makes a lot – so for leftovers, I usually throw back into some chili or make stuffed peppers!
Chicken Corn Chowder Chicken, corn, and bacon in a creamy soup base. Delicious!
Chicken Fajita Soup Love this one!
20-minute Tomato Basil Pair with a side salad and some fresh bread for an easy dinner.
Sweet Potatoes Like thanksgiving candied yams with marshmallows on top.
Mac and Cheese So rich and creamy… The secret for perfect crock-pot m&c is don’t overcook the pasta!
Garlic Parmesan Potatoes Easy side for a pot roast. Would be great in a double crock-pot.
