Toddler Snack Hack: Veggie Loaded Muffins by Garden Lites Kids love this veggie-loaded treat!

Let’s be honest…

Anyone with a toddler knows meal time can be one of the most challenging parts of the day. Not only do I spend time making sure my kids have a balanced diet, I’m also always looking for creative ways to get them to eat healthy! What’s the point of a veggie-loaded plate if it just goes untouched? 

Enter Garden Lites

When I was asked to partner up with this brand, I knew I just had to jump on the opportunity. After all, I can always use more snack ideas for the kids! Garden Lites promises that the first ingredient in every delicious treat is vegetables! But will the kids go for it? I have to admit, I was a little skeptical!

Finding Garden Lites wasn’t too hard at all. I used the store locator to find a retailer near me (it was also really cool that the locator tells you exactly WHICH products they carry from the line). The ShopRite I purchased from carried a ton of options from Garden Lites, and I went home with 5 boxes to try! You can find yours in the freezer section of your nearest Publix, Stop & Shop, Giant, ShopRite, HEB, Kroger or Costco.

First ingredient: Veggies

I couldn’t wait to pitch the Ninja Power Muffins to my two year old. They’re individually wrapped with a character on each one – so I knew it’d be a quick sell. The best part – the first ingredient is zucchini and the ninja turtle green is really spinach! A treat I can feel good about giving to both kids.

The taste? 

I used two muffins with some cheese and strawberries for a light lunch option. The muffins stay in the freezer and defrost in under a minute to the perfect texture. I even snuck an bite, and they were actually really good! These particular ones have chocolate chips as well, so they’re a really great sweet treat.

So how did things go? 

Things went well! I made the mistake of offering cheese with them (which is his favorite), so of course he ate the cheese up pretty quickly and ran away. He did come back to them later on though and ate them! Eli eats everything and these were no exception. He gobbled them up pretty happily. He also really loved the cornbread veggie bites too! I also love that these are individually wrapped, which makes them the perfect option for on-the-go healthy snacking.

    Yummy! Love that you added pictures of your kids trying them. I’m going to make these and see if my picky 7 year old will eat them 🙂
